Buying salamanders

Salamander grills run wider than the name suggests. Buffalo's fixed and rise and fall units start around two hundred and fifty pounds, Lincat's Silverlink 600 counter-top grills come in electric and gas, and Hobart Ecomax adds adjustable height models up to 7.4kW. The top end belongs to Giorik touch-control salamanders and multi-zone gas units, with one and two level toaster versions for cafes.

Adjustable height is worth paying for if you finish anything taller than cheese on toast, because dropping the heat to the food beats waiting for radiant heat to reach it. Quartz elements come up to temperature in seconds and suit pass-top finishing between checks. Fix the unit at eye level on the wall or gantry, and leave clearance above for heat.
