Buying bakeware
The bakeware shelf is nearly all Chef Set, so sizes ladder up neatly and a replacement matches the trays you already own. Baking sheets run from 315mm up to a 660mm full sheet, bakewell pans and handled baking dishes track the same footprints, and roasting dishes go 100mm deep for whole birds. Granite enamel and multi-hole baking trays in 2/3 and 1/1 gastronorm fill out the rack, with little on it over sixty pounds.
Buy trays for your oven, not the recipe. Check rail spacing and internal depth before ordering the biggest sheets, because a tray that will not sit on the runners lives on the floor. Rimmed bakewell pans catch fat from sausages and traybakes; shallow 20mm sheets colour bread more evenly. Order duplicates of your most-used size and rotation gets easier.
