Fryers here split into three tiers. Buffalo countertop units from three to eight litres cover light service and start around a hundred and fifty pounds. The 600 Series and Combisteel Base 700 and 900 lines step up to freestanding singles and doubles, and Hobart Ecomax floorstanding gas and electric fryers lead into Pitco frysuites at the heavy end for chip-led menus. Baskets, seals and control boxes appear as spares, so you can repair a tired fryer rather than replace it.

Size the tank to your busiest hour. Twin tanks keep fish oil away from chips and let each side run its own temperature. Gas recovers faster through a long Friday service; electric installs anywhere the supply allows, and there is next-working-day delivery on stocked lines.
