The questions to ask before you buy
How many covers do you actually do at peak?
Size to your busiest hour, not your average. A 40-cover bistro and a 300-cover events kitchen need very different machines. Under-buying means the motor runs hot and dies early; over-buying wastes cash and bench space. If you're scaling, buy one size up from today's peak.
Continuous use or short bursts?
This is the duty-cycle question and it matters more than wattage. Prep kitchens processing veg all morning need a commercial continuous-duty motor. Front-line blending in bursts can run a lighter machine. A domestic-grade unit run continuously will overheat and cut out mid-service.
What's your bench space and power supply?

One machine or a base unit with attachments?

Dedicated veg prep machines
High-volume operations, care homes, schools, banqueting, processing large quantities of vegetables daily. Continuous-feed with interchangeable discs for slice, dice, grate and julienne. Faster and tougher than a processor attachment when veg prep is the main event.
What to look for
- Duty cycle and motor rating: commercial continuous-duty for prep-line machines; check the manufacturer's rated run time, not just wattage. Watts alone don't tell you if it can run all morning.
- Usable bowl capacity: quoted capacity is often the brim figure. Working capacity for whisking or dough is lower, sometimes by a third. Ask for the working figure for your specific task.
- Blade and disc range: confirm the discs and blades you need are included or available, and that swapping them is tool-free. A slicer's blade should be removable for sharpening and cleaning.
- Proper safety interlocks: the machine must not run with the lid open or bowl unlocked. Slicers need a blade guard and a no-volt release so they don't restart after a power cut. Non-negotiable for staff safety and insurance.
- Power requirement: 13A plug-in versus hardwired or three-phase. Bigger planetary mixers and processors often need more than a socket. Confirm your kitchen's supply matches before ordering.
- Stability and footprint: heavy-duty feet or a bolt-down base for high-torque mixers and slicers, plus enough overhead clearance for tilting heads and lifting bowls out.
- Ease of stripdown and cleaning: dishwasher-safe removable parts, smooth housings, no dirt-trapping crevices. Fast cleaning means it actually gets cleaned during service.
- Build quality and spares support: stainless and quality alloy over cheap plastic on load-bearing parts, and a supplier who stocks blades, seals and spares in the UK so a breakdown isn't a week of downtime.
Costly mistakes to avoid
- Buying on wattage alone. A high watt figure on a domestic-grade motor with a low duty cycle will overheat under real service. Duty cycle and build matter more than the headline number.
- Buying a drop-shipped bargain with no UK spares or support. When a blade, seal or drive belt goes, you want next-day parts and someone who answers the phone, not a machine dead in the water for a fortnight.
