How to choose commercial refrigeration

Refrigeration is the one bit of kit that runs 24/7, so a wrong choice costs you every day: in wasted energy, spoiled stock, or a warm cabinet on a hot service. The trick is to start with the job (chilled storage, frozen storage, or holding prepped food ready to plate), then match capacity, climate class and power supply to your actual kitchen, not a showroom spec sheet. Get those three right and the rest is detail.
The questions to ask before you buy
Do you need a fridge, a freezer, or a prep counter?
Fridge for daily chilled stock (0-5C), freezer for frozen holding (-18 to -22C), prep counter for line-of-service food you plate straight from the top. Many kitchens need all three. Blast chillers are a separate job again: rapidly cooling hot cooked food through the danger zone for HACCP compliance, not long-term storage.
How much cold space do you genuinely need?
Size to your busiest delivery and peak covers, not your quietest day. Uprights are quoted in litres (a single door is roughly 400-600L, a double 1200-1400L); undercounters in GN pans or door count. A common mistake is buying to today's covers, then cramming everything in by month three. Buy one size up if you're growing.
What's your power supply and floor space?
Most single cabinets run off a standard 13A socket; larger doubles and some freezers may want a dedicated spur or hardwiring, so check the amperage before you order. Measure the gap AND the door swing, and leave breathing room around the condenser or it'll run hot and die early. Confirm you can get it through the kitchen door in the first place.
Integral or remote condensing?
Integral means the compressor and condenser sit inside the cabinet: plug in and go, cheapest to fit, but it dumps heat and some noise into your kitchen. Remote means the condenser lives outside or on the roof, keeping the kitchen cooler and quieter, but you'll need an F-Gas registered engineer to install and pipe it. For one or two cabinets, integral is almost always the right call; go remote when you've got a bank of cabinets or a tight, hot kitchen.
What ambient temperature will it live in?
This is the climate class, and it's the spec most people skip. A cabinet rated for a cool room will struggle in a hot kitchen behind the line, run constantly, and fail warranty checks. For a UK commercial kitchen you want climate class 4 or 5 (rated to 30-40C ambient). Don't assume it: check the plate.
How tight is your energy budget?
Refrigeration is on around the clock, so the running cost dwarfs the purchase price over its life. A better energy rating and a properly sealed, self-closing door pays for itself. The main types, and who each suits
Upright cabinets (single/double door)
Bulk chilled or frozen storage: the workhorse for most kitchens, back-of-house, and stockrooms. Single door for smaller sites, double for volume operations.
Undercounter fridges & freezers
Under the pass or bar where floor space is tight and you want cold stock within arm's reach. Ideal for prep areas, coffee sites, and small kitchens.
Prep / saladette counters
Sandwich, pizza, and garnish stations. GN pans chill in the top for made-to-order plating while ingredients stay cold below. Best for high-throughput line service.
Blast chillers & freezers
Any kitchen cooking in batches ahead of service: rapidly pulls hot food through the danger zone for HACCP compliance, extends shelf life, and cuts waste. Essential for banqueting, cook-chill, and meal prep.
Serve-over & display fridges
Front-of-house delis, butchers, cafes, and grab-and-go: keeps product cold while showing it off to the customer. Prioritise glass, lighting, and merchandising space.
What to look for
- Climate class 4 or 5 (rated to a 30-40C ambient) so it copes with a hot UK kitchen without running flat out.
- Energy rating and stated running cost: over a decade the electricity bill outweighs the sticker price, so pay for efficiency.
- GN (gastronorm) compatibility on the shelving and pans, so your existing trays, containers and lids drop straight in with no faff.
- Self-closing doors with a good magnetic gasket: doors left ajar are the number one cause of warm cabinets, wasted energy and failed inspections.
- Refrigerant type and F-Gas status: modern kit uses low-GWP hydrocarbon refrigerants (like R290). Remote systems must be installed by an F-Gas registered engineer.
- Build quality inside: stainless interior, robust adjustable shelves, and a self-evaporating condensate tray you won't have to empty by hand.
- The right power supply: confirm 13A plug-in versus a dedicated spur or hardwired, and check the physical dimensions plus door swing against your space.
- Digital controller with a clear temperature display and (ideally) an audible high-temp alarm, so you catch a fault before you lose a fridge full of stock.
Costly mistakes to avoid
- Buying on price alone. A cheap import with a weak compressor and a poor climate class will cost you more in running costs and spoiled stock within a year than the saving was worth.
- Undersizing. Ordering for today's covers, then wedging deliveries in with the door propped open. Size to your busiest week and leave headroom.
- Ignoring the climate class and where the cabinet lives. Put a coolroom-rated fridge behind a hot line and it'll run constantly, hold temperature poorly, and void its warranty.
- Blocking the airflow. Boxing a cabinet in tight against a wall or oven starves the condenser, makes it overheat, and shortens its life. Always leave the ventilation gap the maker specifies.
