How to choose a bain-marie and hot holding
Quick answer. For most operators, go for a countertop wet (water-bath) bain-marie with individually controlled 1/1 gastronorm wells, sized to hold every dish on your peak servery at once with a spare well. Step up to a hot cupboard plus a heated gantry if you plate to a pass, or a full carvery unit if you carve and serve at the counter. Whichever you choose, load food already piping hot, probe and log the core temperature (63C or above) at the start of service and every couple of hours, and confirm the power supply (a 13A plug rarely covers a multi-well or carvery unit) before you order. Hot holding keeps cooked food safe and ready to serve, but it is not cooking or reheating: food goes in already hot and the unit simply maintains it at 63C or above. Get three things straight first, what you are holding (and whether it dries out), how many dishes you serve at peak, and the power you have at the wall, and the right format follows quickly.
The questions to ask before you buy
What are you holding, and does it dry out or skin?
This decides wet well versus dry well before anything else. A wet (water-bath) well surrounds the pan with gently heated water and steam, so gravy, mash, curries, casseroles, rice and vegetables stay moist and even without skinning or crusting. A dry well heats the pan directly with no water, which suits battered, breaded and roasted items you want to keep from going soggy, and saves the daily fill and drain. If your servery is mostly saucy, wet-based dishes, default to a wet well and hold the odd crisp item separately in a dry space or under a gantry.
How many dishes do you serve at once at peak service?
Count every hot dish on offer during your busiest service, not the headline cover count, because a bain-marie holds by the dish, not the plate. A small carvery might run three 1/1 GN wells (meat, potatoes, veg) plus a gravy well; a hotel breakfast or a school servery needs six or eight. Think in gastronorm: a 1/1 well takes one full pan or two 1/2s, and pan depth matters (100mm for fast-moving lines, 150mm to hold more between top-ups). Size to hold everything you plate at peak at once, plus a spare well, rather than juggling dishes in and out.
Is the food going in already hot?
This is the rule people get wrong, and it is a food-safety line, not a preference. A bain-marie or hot cupboard holds heat, it does not cook or reheat: put food in already piping hot (above 63C) and the unit keeps it there. Load lukewarm or cold food and it sits for hours in the danger zone while it slowly warms, if it ever gets there at all. Reheating is a separate job for your combi, oven or hob (up to piping hot, and to 82C in Scotland), then you transfer straight to the hot hold.
Countertop, drop-in servery, or a full carvery?
Countertop bain-maries sit on or drop into a servery counter and are the everyday choice for pubs, cafes and small canteens. Step up to a hot cupboard (a heated cabinet that warms crockery and holds full GN pans out of sight) when you plate from a pass or need banqueting back-up. A heated gantry or overhead pass heat keeps plated food hot at the collection point and pairs with a bain-marie rather than replacing it. A carvery unit combines all three: a heated base cupboard, gastronorm wells for potatoes and veg, a carving surface and an overhead gantry, usually with a sneeze guard for customer-facing service.
What power supply is at that wall?
Small single or twin-well countertop units usually run on a standard 13A plug. Multi-well bain-maries, hot cupboards and full carvery units draw a great deal more (heating water and a cabinet takes real power) and often need a dedicated spur, hardwiring or three-phase. Wet wells pull more than dry ones because they heat and maintain a water bath. Check the wattage against the socket and the spare capacity on your board before you order, not on delivery day; gas bain-maries are an option for mobile or supply-limited sites.
Who probes and logs the food temperature?
The appliance thermostat is not your food temperature, so you still probe. Use a clean, disinfected probe in the core of the food (not the water or the air), record it at the start of service and at least every two hours, and act on anything reading under 63C. In England and Wales you may hold below 63C for a single period of up to two hours, after which the food must be served, chilled or thrown away. Even when it is safe, quality slides the longer food holds, so batch little and often rather than filling every well at open.
The main types, and who each suits
Countertop wet (water-bath) bain-marie
Pubs, cafes, canteens and small serveries holding sauces, gravy, mash, curries, casseroles, rice and veg. Gentle, even, moist heat that stops food skinning, in 1/1 GN wells that sit on or drop into a counter.
Dry bain-marie / heated well
Holding battered, breaded and roasted items you want to keep from going soggy, and counters where the daily water fill and drain is a nuisance. Faster to heat but harsher, so keep saucy dishes elsewhere.
Hot cupboard (heated cabinet)
Plating from a pass, banqueting and servery back-up: warms crockery and holds full gastronorm pans out of sight at temperature. The base of most carvery and buffet lines.
Heated gantry / overhead pass heat
The pass and collection point, keeping plated food and held pans hot from above with radiant heat or heated shelves. Pairs with a bain-marie or hot cupboard rather than replacing it.
Carvery / servery unit
Carvery pubs, hotels, buffets and function catering: a heated base cupboard, gastronorm wells, a carving surface and an overhead gantry in one, usually with a sneeze guard for customer-facing service.
What to look for
- The right well type for your menu: wet (water-bath) for anything saucy that skins or dries, dry for crisp and roasted items, or a unit that does both.
- Enough gastronorm well capacity to hold every dish you serve at peak at once, in the pan depth you actually use (100mm or 150mm), with a spare well.
- Individually controlled wells or zones, so delicate veg and a rolling gravy are not forced onto the same setting.
- A drain tap on wet wells for quick filling and emptying, and a dry-boil cut-out so a well left to run low does not damage the element.
- A confirmed power match: 13A plug for small countertop units, a dedicated spur, hardwiring or three-phase for multi-well, hot cupboard and carvery kit.
- Seamless stainless wells and a wipe-clean body, so the nightly strip-down and hygiene checks are quick and actually get done.
- Lids, a humidity setting or an overhead gantry to hold moisture and stop food skinning through a long service.
- A stable build with guarded or cool-touch edges, plus a sneeze guard where the unit faces customers.
Costly mistakes to avoid
- Treating it as a cooker: loading cold or lukewarm food and expecting the unit to bring it up to temperature. It only holds heat, so the food parks in the danger zone. Always load it piping hot.
- Running a dry well for wet food, so gravy skins and mash crusts within twenty minutes; or the opposite, letting a wet well boil dry and cook out the element. Match the well to the dish and keep the water topped up.
- Sizing to one hot dish instead of every dish on the servery, then plating off spares or losing wells to warming crockery. Count the dishes you serve at peak and add a spare.
- Assuming it runs on a 13A plug. A multi-well bain-marie, hot cupboard or carvery often needs a spur or three-phase, and finding that out after delivery means a delayed, costlier install.
