The questions to ask before you buy

Traditional espresso or bean-to-cup?

This is the skill-versus-consistency question, and it decides everything else. A traditional machine (a semi-automatic espresso machine with a separate grinder) gives the best cup and full control, but only if you have a trained barista on every shift, because quality lives and dies by the person on the bar. Bean-to-cup grinds, doses, tamps and extracts at one button, so a 17-year-old makes the same flat white all day with no training and no judgement. Cafes with skilled staff and a coffee-led brand go traditional; offices, high-street grab-and-go, hotels and anywhere staff turnover is high go bean-to-cup.

How many cups do I pull in my busiest fifteen minutes?

This sizes the machine, and it is your peak, not your daily total. Count the drinks that land in your worst quarter-hour of the morning. A quiet cafe doing 30 to 40 cups a day is a very different machine from a commuter kiosk hammering out fifty or more cups between 8:00 and 8:15. How many groups do I need?
