The knife wall splits into two camps. Vogue Tsuki blades cover the chef, santoku, carving, bread and paring roles for cooks who want an edge that lasts, while Hygiplas colour-coded paring and serrated knives cost a few pounds each and suit high-turnover prep where blades go walkabout. Choose the workhorse first: a 20cm chef or 17.8cm santoku does most of a shift, so spend there and economise on the rest.
