Arctica Heavy Duty Series Blast Chiller 50kg / Freezer 30kg
Description
Heavy duty blast chillers are specified where cook chill is part of the daily routine rather than an occasional job. Arctica rate this cabinet at 50kg on a chill cycle and 30kg on a freeze cycle, which is enough to take real batch production out of a busy kitchen and get it safely through the temperature range that matters. Pulling heat out quickly protects the food as well as the paperwork: slower cooling means bigger ice crystals, weeping sauces and disappointing texture on regeneration…
