Buying servery & display

Servery and display kit does two jobs at once: it holds food at a safe temperature and it sells. Get the holding right and you pass your temperature checks; get the display right and you shift more of what is on show.

The core split is hot and cold. Bain-maries, hot cupboards and heated gantries keep cooked food above 63C for safe hot holding. Refrigerated display and merchandisers keep chilled food below 8C while showing it off. Ambient display suits bread, cakes and packaged goods. A carvery, a grab-and-go counter and a cafe patisserie each need a different tool.

Two things matter beyond looks. Holding, not cooking: servery kit keeps food at temperature, it does not bring it up, so food goes in hot and comes out hot within the safe window. And sightlines: a display customers cannot see into or reach easily does not sell, so think about height, lighting and glass before you buy.

What temperature must hot-held food stay above?

In the UK, hot food on display for service must be kept at 63C or above. Below that you have a limited window before it becomes unsafe. Bain-maries, hot cupboards and heated gantries hold that temperature reliably, but they hold, they do not reheat: food must go in already hot, and you should check and log temperatures through service.

Wet or dry bain-marie?

A wet, water-bath bain-marie surrounds the food with hot water, so it holds a gentle, even heat that suits sauces and delicate dishes without drying them out. A dry bain-marie heats the wells directly, is quicker to get going and easier to clean, but can dry food if it sits too long. Wet is kinder to the food; dry is simpler to run.

How do I stop food drying out on a servery?

Keep lids or covers on where you can, do not overfill, use a wet bain-marie for anything sauce-based, and rotate stock so nothing sits too long. Batch out to the servery through service rather than filling it at the start, so food spends less time on display and more time fresh in the kitchen.

What display do I need for a grab-and-go counter?

Refrigerated grab-and-go merchandisers, open-fronted or with easy access, so customers can see and reach chilled food quickly while it stays below 8C. Clear sightlines and good lighting matter as much as the fridge itself: the whole point is impulse purchase, so the food has to look good and be easy to grab.

Can I use display equipment to reheat food?

No. Hot holding equipment keeps already-hot food at a safe temperature; it does not bring cold or warm food up through the danger zone. Reheat properly in an oven or on the line first, then transfer to the servery hot. Using a bain-marie to warm food up is both slow and unsafe.

How quickly can you deliver servery equipment?

Smaller counter-top units we may hold in our own warehouse for next-working-day delivery when ordered before the cut-off. Larger heated and refrigerated servery is usually ordered in, so we will confirm the lead time before you commit.
