Pratica builds high-speed ovens: compact units that stack microwave assist on top of impingement airflow (and convection heat) so food that takes minutes in a conventional oven comes out in a fraction of the time, browned and crisped rather than steamed. A toastie, a filled croissant, a pizza slice or a plated ready dish goes from chilled to served while the customer is still at the till. The FIT family covers the spread. FIT Lite is the entry point: a compact 13-amp plug-in for cafés, bakeries and snack-led sites that wants no special power and no fuss. The FIT ST models are stackable, in single or double magnetron, so a busy site can double capacity in the same footprint. FIT XL adds a larger cavity for bigger products, FIT Express pushes double-magnetron speed for peak-hour volume, and the Forza STi is the stackable fast pizza oven. Two practical notes. First, power: the entry units run from a standard 13A socket, while the bigger double-magnetron and XL units want 30A or three-phase, so check the supply before you choose. How fast is a Pratica high-speed oven really?
The honest answer is that it depends on the product, but the combination of microwave energy, impingement airflow and convection heat cooks most counter food in a fraction of conventional time: items that take eight to twelve minutes in a normal oven typically come out in well under half that, browned rather than soggy. For your specific menu, tell us the products and we will give you realistic times per item rather than a brochure number.
Do I need extraction over a Pratica oven?
High-speed ovens are designed for front-of-house and counter positions rather than under a full kitchen canopy, and many installations run without dedicated extraction. Requirements do vary with the site, the food and the local authority though, so treat ventilation as a site-specific check: tell us where the oven is going and what you are cooking and we will confirm what is needed before you order.
What power supply do FIT ovens need?
FIT Lite runs from a standard 13-amp single-phase socket — plug in and cook, no hard wiring. The larger and faster units (FIT ST double magnetron, FIT XL, FIT Express) are available in higher-power single-phase or three-phase versions for maximum speed. If you are not sure what your site has, a photo of the fuse board is usually enough for us to advise.
Can I stack Pratica ovens?
Yes — that is the point of the ST and Forza STi models. Two stacked ovens double your peak-hour capacity in the same counter footprint, which is exactly how busy grab-and-go and pizza operations use them. Stacking kits and the right configuration depend on the models, so tell us the pair you have in mind.
How do I keep a high-speed oven performing?
Daily care is simple but non-negotiable: use the easy-clean liner to catch the mess, and clean with the dedicated Pratica oven cleaner and oven guard products rather than generic chemicals — the guard leaves a protective layer that keeps the cavity and catalytic surfaces working. Skip the routine and speed and browning drift within weeks. We stock the liners and chemicals in six-packs alongside the ovens.
What warranty do Pratica ovens carry?
Two years parts and labour on the ovens as standard supplied through the UK network. Accessories and consumables (baskets, paddles, liners, chemicals) are covered for manufacturing faults. As with all our equipment, the warranty covers the engineer's visit as well as the part.
